Oh Granola

I. LOVE. granola. I think if I could eat only this for breakfast for the rest of my life... I would. I hadn't baked my own for quite some time but, instead was getting it shop brought. Now that I think about it, I much prefer home-made granola because I like knowing what goes into the food I eat. Honestly I don't really follow a recipe I just use whatever I have unless it's the essentials - like oats and honey. Nonetheless this granola is really easy to make and it tastes sooo good. Like as good as the heavenly smell that's currently filled my kitchen through to the hallway! 


(makes 1 jar - above) approx 310g
Ingredients:
270g jumbo rolled oats
1 handful of nuts (eg cashew, pistachio, almond, pecan)
2 tablespoons of dessicated coconut
1 handful of seeds (eg pumpkin, sunflower) 
1/2 teaspoon grated nutmeg
1 teaspoon cinnamon 
2 tablespoons coconut oil
2 teaspoons pure vanilla extract
2 + 1/2 tablespoon honey 
1 teaspoon maple syrup

Directions:
Preheat your oven to 180 degrees Celsius. Put your oats, nuts & seeds, coconut, nutmeg and cinnamon into a large bowl and mix. After that you're going to gently warm and stir the wet ingredients so place your honey, maple syrup, vanilla, and oil into a small pan over a low heat. This will only take about a minute so be careful not to leave it to burn, haha. Once the honey mixture is runny, pour it over your dry ingredients followed by carefully combining them together. When everything is fully coated pour it onto a baking sheet. Bigger is better so it can cook evenly. Place in the oven to bake for 15 mins then check & stir as necessary. It should take approximately 22 minutes to get it golden like mine but just bake it to your preference. After, you should store it in an airtight container to keep it fresh. To serve, I enjoy it with vanilla yoghurt and fresh or frozen fruit. Or even just on it's own with milk such as almond or soy.
